Greek Grouper
Tomato-Olive CouscousIngredients
- 6 (6-oz) grouper fillets
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- ¾ cup Greek vinaigrette
Instructions
- Sprinkle fish with salt and pepper. Cook fish in hot oil in a large skillet over medium-high heat 3 minutes.
- Turn fish, add dressing to skillet, and cook 3 minutes or until fish flakes with a fork.
Side Dish Ingredients
- 1½ cups Israeli (pearl) couscous
- 1 lemon
- 1 pint grape tomatoes, halved
- ¾ cup chopped kalamata olives
- 2 Tbsp olive oil
- 2 Tbsp chopped fresh thyme (or use oregano or basil)
Side Dish Instructions
- Cook couscous according to package directions.
- Meanwhile, grate zest and squeeze juice from lemon. Cook tomatoes and olives in hot oil in large skillet over medium-high heat 6 minutes. Remove from heat.
- Add couscous, lemon zest, lemon juice, and thyme to skillet; stir.
