Greek Grouper

Tomato-Olive Couscous

Ingredients

  • 6 (6-oz) grouper fillets
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • ¾ cup Greek vinaigrette

Instructions

  1. Sprinkle fish with salt and pepper. Cook fish in hot oil in a large skillet over medium-high heat 3 minutes.
  2. Turn fish, add dressing to skillet, and cook 3 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 1½ cups Israeli (pearl) couscous
  • 1 lemon
  • 1 pint grape tomatoes, halved
  • ¾ cup chopped kalamata olives
  • 2 Tbsp olive oil
  • 2 Tbsp chopped fresh thyme (or use oregano or basil)

Side Dish Instructions

  1. Cook couscous according to package directions.
  2. Meanwhile, grate zest and squeeze juice from lemon. Cook tomatoes and olives in hot oil in large skillet over medium-high heat 6 minutes. Remove from heat.
  3. Add couscous, lemon zest, lemon juice, and thyme to skillet; stir.
