Sun-Dried Tomato and Hummus Pasta

Ingredients

  • 12 oz whole wheat spaghetti
  • 2 (15-oz) cans chickpeas, drained and rinsed
  • 1 cup sun-dried tomatoes in oil
  • 1 tsp Italian seasoning
  • 1 Tbsp olive oil
  • ¾ cup plain hummus
  • ¼ cup chopped fresh basil (optional)

Instructions

  1. Cook pasta according to package directions. Drain, reserving 1 cup pasta water.
  2. Meanwhile, cook chickpeas, tomatoes, and Italian seasoning in hot oil in a large skillet over medium-high heat 6 minutes or until chickpeas are lightly browned.
  3. Add hummus and ½ cup pasta water, adding more pasta water as needed to reach desired sauce consistency. Serve chickpea mixture over pasta. Sprinkle with basil, if desired.

Side Dish Ingredients

  • 2 (5-oz) pkg mixed greens
  • 1 cup mandarin oranges
  • ½ cup chopped walnuts
  • ⅓ cup lemon vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
