Sun-Dried Tomato and Hummus Pasta
Citrus and Greens Salad
Ingredients
- 12 oz whole wheat spaghetti
- 2 (15-oz) cans chickpeas, drained and rinsed
- 1 cup sun-dried tomatoes in oil
- 1 tsp Italian seasoning
- 1 Tbsp olive oil
- ¾ cup plain hummus
- ¼ cup chopped fresh basil (optional)
Instructions
- Cook pasta according to package directions. Drain, reserving 1 cup pasta water.
- Meanwhile, cook chickpeas, tomatoes, and Italian seasoning in hot oil in a large skillet over medium-high heat 6 minutes or until chickpeas are lightly browned.
- Add hummus and ½ cup pasta water, adding more pasta water as needed to reach desired sauce consistency. Serve chickpea mixture over pasta. Sprinkle with basil, if desired.
Side Dish Ingredients
- 2 (5-oz) pkg mixed greens
- 1 cup mandarin oranges
- ½ cup chopped walnuts
- ⅓ cup lemon vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl.
