Chorizo-Black Bean Chili

Ingredients
- ½ onion, chopped
- 2 Tbsp water
- 1 lb ground chorizo sausage
- 1 lb extra-lean ground beef
- 2 Tbsp butter
- 2 Tbsp all-purpose flour
- 2 (14.5-oz) cans unsalted diced tomatoes
- ¼ tsp pepper
- 1 (15.5-oz) can low-sodium black beans, drained and rinsed
Instructions
- Cook onion, covered, with 2 Tbsp water in a large Dutch oven over medium heat 5 minutes or until tender.
- Add chorizo and beef; cook 5 to 8 minutes or until browned and crumbly.
- Stir in butter until melted. Stir in flour, tomatoes, and pepper. Simmer, uncovered, 8 to 10 minutes, stirring occasionally.
- Add beans; simmer 5 minutes or until chili has thickened slightly.
Side Dish Ingredients
- 1 (10.8-oz) pkg frozen Southwest corn medley
- 1 Tbsp olive oil
- ½ jalapeño pepper, chopped
- 1 Tbsp butter
Side Dish Instructions
- Cook corn in hot oil in a large cast-iron skillet over medium heat 8 to 10 minutes.
- Stir in jalapeño; cook 5 minutes or until liquid has evaporated. Stir in butter. Serve corn over chili, if desired.
