Ingredients

  • ½ onion, chopped
  • 2 Tbsp water
  • 1 lb ground chorizo sausage
  • 1 lb extra-lean ground beef
  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • 2 (14.5-oz) cans unsalted diced tomatoes
  • ¼ tsp pepper
  • 1 (15.5-oz) can low-sodium black beans, drained and rinsed

Instructions

  1. Cook onion, covered, with 2 Tbsp water in a large Dutch oven over medium heat 5 minutes or until tender.
  2. Add chorizo and beef; cook 5 to 8 minutes or until browned and crumbly.
  3. Stir in butter until melted. Stir in flour, tomatoes, and pepper. Simmer, uncovered, 8 to 10 minutes, stirring occasionally.
  4. Add beans; simmer 5 minutes or until chili has thickened slightly.

Side Dish Ingredients

  • 1 (10.8-oz) pkg frozen Southwest corn medley
  • 1 Tbsp olive oil
  • ½ jalapeño pepper, chopped
  • 1 Tbsp butter

Side Dish Instructions

  1. Cook corn in hot oil in a large cast-iron skillet over medium heat 8 to 10 minutes.
  2. Stir in jalapeño; cook 5 minutes or until liquid has evaporated. Stir in butter. Serve corn over chili, if desired.
