Sheet Pan Roasted Fish with Broccoli and Tomatoes
Ingredients
- 6 (6-oz) cod fillets
- 4 Tbsp olive oil, divided
- 2 tsp Italian seasoning
- 1 pint grape tomatoes, halved
- 1 head broccoli, cut into florets
- 3 cloves garlic, minced
- 1 lemon
- 3 Tbsp chopped fresh basil
- 1 Tbsp honey
Instructions
- Preheat oven to 425°F. Place fish on a large rimmed baking sheet. Drizzle with 1 Tbsp oil, and sprinkle with Italian seasoning. Season lightly with salt and pepper.
- Toss together tomatoes, broccoli, 3 Tbsp oil, and garlic in a large bowl; season lightly with salt and pepper. Arrange tomato mixture around fish.
- Bake 15 to 20 minutes or until fish flakes with a fork.
- Meanwhile, grate zest and squeeze juice from lemon. Stir together lemon zest, lemon juice, basil, and honey; drizzle over fish and vegetables.
