Ingredients
- 2 large sweet onions, thinly sliced
- 3 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 1 (16-oz) loaf Italian bread, split and toasted
- ⅓ cup creamy horseradish sauce
- 1 (14.5-oz) can beef broth
- 1½ lb shaved deli roast beef
- 3 cups baby arugula
Instructions
- Cook onions in hot oil in a large skillet over medium heat 3 minutes. Cover and cook 10 minutes or until onions begin to soften.
- Uncover, increase heat to medium-high, and cook 5 minutes longer, stirring frequently, until onions begin to brown; add vinegar. Cook 1 minute.
- Meanwhile, spread cut sides of bread with horseradish sauce.
- Heat broth in a saucepan over medium-high heat; add roast beef, and let stand until hot.
- Layer roast beef on bread, and top with onions and arugula. Cut into 6 servings. Serve with broth for dipping, if desired.

- 1 (32-oz) pkg frozen French fries
- ¼ cup butter, melted
- 1 Tbsp dried parsley
- 2 tsp minced garlic
Side Dish Instructions
- Bake fries according to package directions.
- Stir together melted butter, parsley, and garlic in a bowl; drizzle over fries, and toss.
