Vegetable-Beef Soup

Italian Garlic Bread

Ingredients

  • 1 lb ground beef
  • 1 zucchini, cut into half-moons
  • ½ cup chopped onion
  • 1 Tbsp minced garlic
  • 1 (16-oz) pkg frozen mixed vegetables
  • 2 (14.5-oz) cans diced tomatoes with Italian seasoning
  • 1 (32-oz) carton chicken broth
  • 1 (15-oz) can great Northern beans, rinsed and drained

Instructions

  1. Cook beef, zucchini, onion, and garlic in a Dutch oven over medium heat until beef is browned and crumbly; drain, and return to pot.
  2. Add mixed vegetables and remaining ingredients; bring to a boil, reduce heat, and simmer 10 minutes.

Side Dish Ingredients

  • ¼ cup butter, softened
  • 2 tsp minced garlic
  • 1 tsp Italian seasoning
  • 1 (16-oz) loaf French bread, cut in half lengthwise

Side Dish Instructions

  1. Preheat broiler.
  2. Combine butter, garlic, and Italian seasoning in a small bowl; spread over cut sides of bread. Broil bread just until toasted; cut into slices.
