Vegetable-Beef Soup
Italian Garlic BreadIngredients
- 1 lb ground beef
- 1 zucchini, cut into half-moons
- ½ cup chopped onion
- 1 Tbsp minced garlic
- 1 (16-oz) pkg frozen mixed vegetables
- 2 (14.5-oz) cans diced tomatoes with Italian seasoning
- 1 (32-oz) carton chicken broth
- 1 (15-oz) can great Northern beans, rinsed and drained
Instructions
- Cook beef, zucchini, onion, and garlic in a Dutch oven over medium heat until beef is browned and crumbly; drain, and return to pot.
- Add mixed vegetables and remaining ingredients; bring to a boil, reduce heat, and simmer 10 minutes.

- ¼ cup butter, softened
- 2 tsp minced garlic
- 1 tsp Italian seasoning
- 1 (16-oz) loaf French bread, cut in half lengthwise
Side Dish Instructions
- Preheat broiler.
- Combine butter, garlic, and Italian seasoning in a small bowl; spread over cut sides of bread. Broil bread just until toasted; cut into slices.
