Cheesy Meatball Subs
Oregano Roasted PotatoesIngredients
- 6 hoagie rolls
- Reserved cooked meatballs and sauce (from Meatballs Marinara recipe)
- 1½ cups shredded mozzarella cheese
Instructions
- Preheat oven to 400°F.
- Cut rolls in half lengthwise; place on a baking sheet. Bake 10 minutes.
- Cut meatballs in half. Fill each roll with 4 meatball halves, ¼ cup sauce, and ¼ cup cheese. Wrap each sandwich in foil.
- Bake 15 minutes or until cheese melts.
Side Dish Ingredients
- 1½ lb red potatoes, cut into wedges
- 2 Tbsp olive oil
- ¾ tsp dried oregano
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F.
- Toss together potatoes, oil, oregano, salt, and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 18 minutes or until browned and tender, turning once.
