Cheesy Meatball Subs

Ingredients

  • 6 hoagie rolls
  • Reserved cooked meatballs and sauce (from Meatballs Marinara recipe)
  • 1½ cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F.
  2. Cut rolls in half lengthwise; place on a baking sheet. Bake 10 minutes.
  3. Cut meatballs in half. Fill each roll with 4 meatball halves, ¼ cup sauce, and ¼ cup cheese. Wrap each sandwich in foil.
  4. Bake 15 minutes or until cheese melts.

Side Dish Ingredients

  • 1½ lb red potatoes, cut into wedges
  • 2 Tbsp olive oil
  • ¾ tsp dried oregano
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F.
  2. Toss together potatoes, oil, oregano, salt, and pepper on a rimmed baking sheet; spread in a single layer.
  3. Bake 18 minutes or until browned and tender, turning once.
