Shrimp Creole
Steamed Rice and Crunchy Garlic BreadIngredients
- 1 (28-oz) can diced tomatoes
- 1 (15-oz) can tomato sauce
- 2 cups chopped celery
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 1 tsp hot sauce
- ½ tsp pepper
- 1½ lb medium-size, raw shrimp, peeled and deveined
- ½ cup sliced green onions
- ½ cup chopped fresh parsley
Instructions
- Combine tomatoes, tomato sauce, celery, onion, bell pepper, garlic, hot sauce, and pepper in a 5- to 7-quart slow cooker.
- Cover and cook on LOW 8 hours.
- Stir in shrimp; cover and cook 20 to 30 minutes or just until shrimp turn pink. Stir in green onions and parsley. Serve over rice.
Side Dish Ingredients
- 3 (3.5-oz) pouches boil-in-bag brown rice
- 1 (8-oz) French baguette, halved lengthwise
- 2 Tbsp butter, melted
- 2 cloves garlic, minced
Side Dish Instructions
- Cook rice according to package directions.
- Preheat oven to broil. Place baguette halves on a baking sheet; brush cut sides with butter, and spread with garlic.
- Broil 4 to 5 minutes or until toasted.
