Ingredients

  • 1 (28-oz) can diced tomatoes
  • 1 (15-oz) can tomato sauce
  • 2 cups chopped celery
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 tsp hot sauce
  • ½ tsp pepper
  • 1½ lb medium-size, raw shrimp, peeled and deveined
  • ½ cup sliced green onions
  • ½ cup chopped fresh parsley

Instructions

  1. Combine tomatoes, tomato sauce, celery, onion, bell pepper, garlic, hot sauce, and pepper in a 5- to 7-quart slow cooker.
  2. Cover and cook on LOW 8 hours.
  3. Stir in shrimp; cover and cook 20 to 30 minutes or just until shrimp turn pink. Stir in green onions and parsley. Serve over rice.

Side Dish Ingredients

  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • 1 (8-oz) French baguette, halved lengthwise
  • 2 Tbsp butter, melted
  • 2 cloves garlic, minced

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Preheat oven to broil. Place baguette halves on a baking sheet; brush cut sides with butter, and spread with garlic.
  3. Broil 4 to 5 minutes or until toasted.
