Bacon-Wrapped Barbecue Pork Tenderloin

Ingredients

  • 1 mesquite barbecue pork tenderloin
  • ¼ tsp pepper
  • 6 slices bacon

Instructions

  1. Preheat grill to medium heat. Season pork with pepper. Wrap bacon slices around pork, securing with wooden picks.
  2. Grill pork, covered, 8 to 12 minutes per side or until bacon is cooked and a meat thermometer inserted reads 145°F. Cover loosely, and let stand 10 minutes.
  3. Remove wooden picks, and slice pork to serve.

Side Dish Ingredients

  • ¼ cup olive-oil mayonnaise
  • 2 Tbsp apple cider vinegar
  • 1½ Tbsp yellow mustard
  • ½ tsp kosher salt
  • ¼ tsp garlic powder
  • ½ tsp salt
  • ½ (16-oz) pkg shredded coleslaw

Side Dish Instructions

  1. Whisk mayonnaise and next 5 ingredients in a bowl. Add coleslaw, and toss. Chill slaw until ready to serve.
