Greek Chicken Bowls
Ingredients
- 1 (12-oz) pkg frozen cauliflower rice
- 2½ Tbsp olive oil, divided
- ¼ tsp garlic salt
- 2 cups shredded rotisserie chicken
- ½ English cucumber, halved lengthwise and sliced
- ¾ cup grape tomatoes, halved
- ¼ cup crumbled feta cheese
- 6 pitted kalamata olives
- 1 tsp Greek seasoning
Instructions
- Cook cauliflower rice according to package directions.
- Combine cauliflower rice in a bowl with ½ Tbsp oil and garlic salt. Divide among 3 bowls.
- Top each bowl with chicken, cucumber, tomatoes, cheese, and olives.
- Whisk together 2 Tbsp oil and Greek seasoning. Drizzle flavored oil over bowls.
