Oven-Roasted Pork Tenderloin
Cheesy Creamed Spinach
Ingredients
- 1 pork tenderloin, trimmed (1 lb)
- ½ tsp kosher salt, divided
- ⅛ tsp garlic powder
- ¼ cup olive oil, divided
- ¼ (1-oz) pkg fresh chives
Instructions
- Preheat oven to 425°F. Rub pork with ¼ tsp salt and garlic powder. Cook pork in 1 Tbsp hot oil in a large cast-iron or ovenproof skillet over medium-high heat 5 minutes or until browned on all sides. Transfer skillet to oven.
- Bake 10 to 15 minutes or until a meat thermometer inserted reads 145°F; let stand 5 minutes before slicing.
- Meanwhile, process 3 Tbsp oil, chives, and ¼ tsp salt in a blender until smooth. Serve chive oil with pork.

- 1 Tbsp butter
- 1½ oz cream cheese
- 1 (10-oz) pkg spinach
- 1 cup shredded Cheddar cheese
- 1 Tbsp heavy cream (or use half-and-half)
Side Dish Instructions
- Melt butter in a large skillet over medium heat; add cream cheese, and stir until melted.
- Gradually add spinach, and cook until wilted. Add Cheddar and cream. Stir until cheese melts and spinach is coated.
