Baked Spaghetti Pie

Ingredients

  • 8 oz whole-grain spaghetti
  • 2 Tbsp olive oil
  • 2 large eggs, beaten
  • ½ cup freshly grated Parmesan cheese
  • 1 cup ricotta cheese
  • 1 (25-oz) jar marinara sauce
  • 1 tsp Italian seasoning
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F. Cook spaghetti according to package directions.
  2. Toss spaghetti with oil, eggs, and Parmesan cheese. Spoon spaghetti mixture into a lightly greased 10-inch pie plate to form a crust.
  3. Spread ricotta cheese over crust; top with marinara sauce. Sprinkle with Italian seasoning.
  4. Bake 30 minutes. Top with mozzarella cheese. Bake 5 minutes longer or until cheese melts; cool 5 minutes. Cut into wedges.

Side Dish Ingredients

  • 2 (5-oz) pkg mixed baby greens
  • 2 tomatoes, cut into wedges
  • 1 English cucumber, sliced
  • 1 cup pitted kalamata olives, halved
  • ½ cup vegan balsamic vinaigrette
  • 1 cup crumbled feta cheese

Side Dish Instructions

  1. Combine greens, tomatoes, cucumber, and olives in a large bowl. Drizzle with vinaigrette; toss. Sprinkle with cheese.
