Baked Spaghetti Pie
Greek Salad
Ingredients
- 8 oz whole-grain spaghetti
- 2 Tbsp olive oil
- 2 large eggs, beaten
- ½ cup freshly grated Parmesan cheese
- 1 cup ricotta cheese
- 1 (25-oz) jar marinara sauce
- 1 tsp Italian seasoning
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 350°F. Cook spaghetti according to package directions.
- Toss spaghetti with oil, eggs, and Parmesan cheese. Spoon spaghetti mixture into a lightly greased 10-inch pie plate to form a crust.
- Spread ricotta cheese over crust; top with marinara sauce. Sprinkle with Italian seasoning.
- Bake 30 minutes. Top with mozzarella cheese. Bake 5 minutes longer or until cheese melts; cool 5 minutes. Cut into wedges.

- 2 (5-oz) pkg mixed baby greens
- 2 tomatoes, cut into wedges
- 1 English cucumber, sliced
- 1 cup pitted kalamata olives, halved
- ½ cup vegan balsamic vinaigrette
- 1 cup crumbled feta cheese
Side Dish Instructions
- Combine greens, tomatoes, cucumber, and olives in a large bowl. Drizzle with vinaigrette; toss. Sprinkle with cheese.
