Seared Tuna Poke

Sesame Cauliflower "Rice"

Ingredients

  • ½ lb tuna steaks
  • 1 Tbsp avocado oil
  • 1½ Tbsp low-sodium soy sauce
  • 2 tsp rice vinegar
  • ¾ tsp Sriracha hot sauce
  • ½ tsp fish sauce
  • ¾ tsp minced ginger
  • 1 avocado, diced
  • ½ cup thinly sliced English cucumber

Instructions

  1. Sear tuna in hot oil in a skillet over high heat 1 to 2 minutes per side. Let stand 1 to 2 minutes. Cut into large cubes.
  2. Combine soy sauce, vinegar, Sriracha, fish sauce, and ginger in a bowl. Add tuna, avocado, and cucumber; toss. Serve over Sesame Cauliflower Rice recipe.

  • ½ (12-oz) pkg cauliflower crumbles
  • 1½ Tbsp avocado oil
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1½ Tbsp sesame seeds

Side Dish Instructions

  1. Preheat oven to 400°F. Combine cauliflower, oil, garlic, salt, and pepper on a rimmed baking sheet; spread in a single layer.
  2. Bake 20 minutes or until browned, stirring once.
  3. Toast sesame seeds in a small skillet over medium-high heat 2 to 3 minutes or until fragrant. Stir into cauliflower "rice" before serving.
