Seared Tuna Poke

Ingredients
- ½ lb tuna steaks
- 1 Tbsp avocado oil
- 1½ Tbsp low-sodium soy sauce
- 2 tsp rice vinegar
- ¾ tsp Sriracha hot sauce
- ½ tsp fish sauce
- ¾ tsp minced ginger
- 1 avocado, diced
- ½ cup thinly sliced English cucumber
Instructions
- Sear tuna in hot oil in a skillet over high heat 1 to 2 minutes per side. Let stand 1 to 2 minutes. Cut into large cubes.
- Combine soy sauce, vinegar, Sriracha, fish sauce, and ginger in a bowl. Add tuna, avocado, and cucumber; toss. Serve over Sesame Cauliflower Rice recipe.
Side Dish Ingredients
- ½ (12-oz) pkg cauliflower crumbles
- 1½ Tbsp avocado oil
- 1 clove garlic, minced
- ¼ tsp salt
- ¼ tsp pepper
- 1½ Tbsp sesame seeds
Side Dish Instructions
- Preheat oven to 400°F. Combine cauliflower, oil, garlic, salt, and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 20 minutes or until browned, stirring once.
- Toast sesame seeds in a small skillet over medium-high heat 2 to 3 minutes or until fragrant. Stir into cauliflower "rice" before serving.
