Salmon-Rice Bowls

Ingredients
- 3 Tbsp butter, softened
- 2½ tsp curry powder
- 6 (6-oz) salmon fillets
- 2 Tbsp fresh lemon juice
- 1 (12-oz) pkg broccoli florets
- 2 (8.8-oz) pouches microwavable long grain white rice
- 2 Tbsp ginger paste
- ½ cup roasted and salted almonds, coarsely chopped
Instructions
- Preheat oven to 425°F. Stir together butter and curry powder. Spread over fish, and place on a large rimmed baking sheet. Drizzle with lemon juice, and bake 10 minutes or to desired doneness. Flake fish into chunks.
- Meanwhile, cook broccoli according to package directions. Cool and chop any large pieces.
- Heat rice according to package directions; spoon into a large bowl. Add ginger paste and chopped broccoli; stir well.
- Serve salmon and broccoli rice in bowls. Sprinkle with nuts.
