Ingredients

  • 3 Tbsp butter, softened
  • 2½ tsp curry powder
  • 6 (6-oz) salmon fillets
  • 2 Tbsp fresh lemon juice
  • 1 (12-oz) pkg broccoli florets
  • 2 (8.8-oz) pouches microwavable long grain white rice
  • 2 Tbsp ginger paste
  • ½ cup roasted and salted almonds, coarsely chopped

Instructions

  1. Preheat oven to 425°F. Stir together butter and curry powder. Spread over fish, and place on a large rimmed baking sheet. Drizzle with lemon juice, and bake 10 minutes or to desired doneness. Flake fish into chunks.
  2. Meanwhile, cook broccoli according to package directions. Cool and chop any large pieces.
  3. Heat rice according to package directions; spoon into a large bowl. Add ginger paste and chopped broccoli; stir well.
  4. Serve salmon and broccoli rice in bowls. Sprinkle with nuts.
