Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • 1 lemon
  • ½ cup plain Greek yogurt
  • ½ cup crumbled feta cheese
  • 3 Tbsp mayonnaise

Instructions

  1. Sprinkle chicken lightly with salt and pepper, if desired. Cook chicken in a large nonstick skillet coated with cooking spray over medium-high heat 5 to 6 minutes per side or until done.
  2. Meanwhile, grate 2 tsp zest and squeeze 2 Tbsp juice from lemon. Combine lemon zest, lemon juice, yogurt, cheese, and mayonnaise. Serve sauce with chicken.

  • 8 oz orzo
  • 1 (5-oz) pkg baby spinach
  • 3 Tbsp olive oil
  • 1 Tbsp Greek seasoning
  • ½ tsp salt

Side Dish Instructions

  1. Cook pasta according to package directions. Drain and return orzo to pot. Add spinach, oil, and seasoning; stir until spinach wilts.
