Pork and Vegetable Stir-Fry

Ingredients

  • 1½ lb ground pork (or use ground turkey)
  • 2 Tbsp olive oil
  • 1½ cups shredded carrots
  • 2 red bell peppers, sliced
  • 1 (8-oz) pkg snow peas
  • 1 (8-oz) can sliced water chestnuts, drained
  • 1 cup orange sauce

Instructions

  1. Cook pork in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned and crumbly.
  2. Add carrots, bell peppers, snow peas, and water chestnuts; cook 6 to 8 minutes or until tender. Add orange sauce; cook 2 minutes or until thoroughly heated.

Side Dish Ingredients

  • 3 (3-oz) pkg boil-in-bag quinoa
  • 3 green onions, sliced
  • ½ tsp salt

Side Dish Instructions

  1. Prepare quinoa according to package directions. Transfer to a bowl, and stir in onions and salt.
