Pork and Vegetable Stir-Fry
Green Onion Quinoa
Ingredients
- 1½ lb ground pork (or use ground turkey)
- 2 Tbsp olive oil
- 1½ cups shredded carrots
- 2 red bell peppers, sliced
- 1 (8-oz) pkg snow peas
- 1 (8-oz) can sliced water chestnuts, drained
- 1 cup orange sauce
Instructions
- Cook pork in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned and crumbly.
- Add carrots, bell peppers, snow peas, and water chestnuts; cook 6 to 8 minutes or until tender. Add orange sauce; cook 2 minutes or until thoroughly heated.
Side Dish Ingredients
- 3 (3-oz) pkg boil-in-bag quinoa
- 3 green onions, sliced
- ½ tsp salt
Side Dish Instructions
- Prepare quinoa according to package directions. Transfer to a bowl, and stir in onions and salt.
