Beet, Feta, and Spinach Veggie Wraps

Ingredients

  • 2 (8-oz) pkg steamed baby beets
  • 1 (5-oz) pkg baby spinach
  • ½ cup crumbled feta cheese (or use goat cheese)
  • 1 cup thinly sliced English cucumber
  • ½ cup thinly sliced red onion
  • ½ (6-oz) pkg crunchy sea salt-flavored chickpeas
  • ⅓ cup vegan balsamic vinaigrette
  • 3 (8.8-oz) pkg whole wheat naan

Instructions

  1. Coarsely chop beets. Combine beets, spinach, cheese, cucumber, onion, and chickpeas in a bowl; toss with vinaigrette.
  2. Divide salad among naan; roll up, and cut in half.
