Beet, Feta, and Spinach Veggie Wraps
French Fries
Ingredients
- 2 (8-oz) pkg steamed baby beets
- 1 (5-oz) pkg baby spinach
- ½ cup crumbled feta cheese (or use goat cheese)
- 1 cup thinly sliced English cucumber
- ½ cup thinly sliced red onion
- ½ (6-oz) pkg crunchy sea salt-flavored chickpeas
- ⅓ cup vegan balsamic vinaigrette
- 3 (8.8-oz) pkg whole wheat naan
Instructions
- Coarsely chop beets. Combine beets, spinach, cheese, cucumber, onion, and chickpeas in a bowl; toss with vinaigrette.
- Divide salad among naan; roll up, and cut in half.
