Roasted Broccoli and Mushroom Pizzas
Kale Salad with Creamy Dressing
Ingredients
- 1 (12-oz) pkg broccoli florets
- 2 Tbsp olive oil
- ¼ tsp pepper
- 1 cup marinara sauce, divided
- 1½ cups shredded low-moisture part-skim mozzarella cheese, divided
- 2 (12-inch) prebaked pizza crusts
- 1 (8-oz) pkg sliced mushrooms
- 1 cup thinly sliced red onion
- ½ cup freshly shredded Parmesan cheese, divided
Instructions
- Preheat oven to 450°F. Toss together broccoli, oil, and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 10 to 12 minutes or until browned, stirring once after 5 minutes.
- Spread ½ cup marinara on each crust, and sprinkle each with ½ cup mozzarella cheese. Top each with half of roasted broccoli, mushrooms, and onion.
- Sprinkle each pizza with ¼ cup mozzarella and ¼ cup Parmesan.
- Bake 10 to 12 minutes or until cheese is melted and crust is golden.

- ¼ cup olive oil
- ¼ cup plain Greek yogurt
- 1½ Tbsp fresh lemon juice
- 2 cloves garlic, minced
- 2 tsp stone-ground mustard
- 2 (5-oz) pkg baby kale
- ¼ cup freshly shredded Parmesan cheese
Side Dish Instructions
- Whisk together oil, yogurt, lemon juice, garlic, and mustard in a bowl. Add kale and cheese; toss.
