Roasted Broccoli and Mushroom Pizzas

Ingredients

  • 1 (12-oz) pkg broccoli florets
  • 2 Tbsp olive oil
  • ¼ tsp pepper
  • 1 cup marinara sauce, divided
  • 1½ cups shredded low-moisture part-skim mozzarella cheese, divided
  • 2 (12-inch) prebaked pizza crusts
  • 1 (8-oz) pkg sliced mushrooms
  • 1 cup thinly sliced red onion
  • ½ cup freshly shredded Parmesan cheese, divided

Instructions

  1. Preheat oven to 450°F. Toss together broccoli, oil, and pepper on a rimmed baking sheet; spread in a single layer.
  2. Bake 10 to 12 minutes or until browned, stirring once after 5 minutes.
  3. Spread ½ cup marinara on each crust, and sprinkle each with ½ cup mozzarella cheese. Top each with half of roasted broccoli, mushrooms, and onion.
  4. Sprinkle each pizza with ¼ cup mozzarella and ¼ cup Parmesan.
  5. Bake 10 to 12 minutes or until cheese is melted and crust is golden.

  • ¼ cup olive oil
  • ¼ cup plain Greek yogurt
  • 1½ Tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tsp stone-ground mustard
  • 2 (5-oz) pkg baby kale
  • ¼ cup freshly shredded Parmesan cheese

Side Dish Instructions

  1. Whisk together oil, yogurt, lemon juice, garlic, and mustard in a bowl. Add kale and cheese; toss.
