Cheesy Ranch Chicken

Ingredients

  • ½ cup shredded Cheddar cheese
  • 3 Tbsp mayonnaise
  • 1½ tsp gluten-free Ranch dressing mix
  • 3 (6-oz) boneless, skinless chicken breasts
  • 1½ tsp olive oil

Instructions

  1. Combine cheese, mayonnaise, and Ranch in a bowl.
  2. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 6 minutes. Turn chicken over, and top with cheese mixture; cook 6 minutes until chicken is done and cheese is melted.

Side Dish Ingredients

  • 1 (3.5-oz) pkg boil-in-bag brown rice
  • 1 (12-oz) pkg broccoli florets
  • 2 Tbsp butter, cut into pieces
  • ¼ tsp salt
  • 2 small cloves garlic, minced

Side Dish Instructions

  1. Cook rice and broccoli according to package directions.
  2. Toss together rice, broccoli, butter, salt, and garlic in a bowl, stirring until butter melts.
