Cheesy Ranch Chicken
Buttery Broccoli Rice
Ingredients
- ½ cup shredded Cheddar cheese
- 3 Tbsp mayonnaise
- 1½ tsp gluten-free Ranch dressing mix
- 3 (6-oz) boneless, skinless chicken breasts
- 1½ tsp olive oil
Instructions
- Combine cheese, mayonnaise, and Ranch in a bowl.
- Cook chicken in hot oil in a large nonstick skillet over medium-high heat 6 minutes. Turn chicken over, and top with cheese mixture; cook 6 minutes until chicken is done and cheese is melted.
Side Dish Ingredients
- 1 (3.5-oz) pkg boil-in-bag brown rice
- 1 (12-oz) pkg broccoli florets
- 2 Tbsp butter, cut into pieces
- ¼ tsp salt
- 2 small cloves garlic, minced
Side Dish Instructions
- Cook rice and broccoli according to package directions.
- Toss together rice, broccoli, butter, salt, and garlic in a bowl, stirring until butter melts.
