Ground Beef Lettuce Wraps
Carrot Salad
Ingredients
- 1½ lb ground beef (or use ground turkey)
- 1 tsp salt
- ¼ tsp pepper
- ½ cup creamy peanut butter (or use almond butter)
- 3 Tbsp soy sauce
- 2 Tbsp rice vinegar
- 2 cloves garlic, minced
- 1 small head leaf lettuce, leaves separated
- 1 lime, cut into wedges
Instructions
- Cook beef, salt, and pepper in a large skillet over medium-high heat 8 to 10 minutes or until beef is browned and crumbly; keep warm.
- Whisk together peanut butter, soy sauce, vinegar, and garlic.
- Divide beef among desired number of lettuce leaves; drizzle with peanut sauce. Serve with lime wedges. Top with Carrot Salad recipe, or serve it on the side.
