Grilled Chicken and Pineapple Sandwiches

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • ½ peeled and cored pineapple, cut into ½-inch-thick slices
  • 4 slices fully cooked bacon, cut in half
  • 2 hamburger buns, toasted
  • 2 Tbsp mayonnaise
  • 2 basil leaves

Instructions

  1. Preheat grill or grill pan to medium-high heat. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; lightly season with salt and pepper.
  2. Grill chicken 5 to 6 minutes per side or until done. Grill pineapple 2 to 3 minutes each side or until browned.
  3. Serve chicken, pineapple, and bacon on buns with mayonnaise and basil.
