Grilled Chicken and Pineapple Sandwiches
Sweet Potato FriesIngredients
- ¾ lb boneless, skinless chicken breasts
- ½ peeled and cored pineapple, cut into ½-inch-thick slices
- 4 slices fully cooked bacon, cut in half
- 2 hamburger buns, toasted
- 2 Tbsp mayonnaise
- 2 basil leaves
Instructions
- Preheat grill or grill pan to medium-high heat. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; lightly season with salt and pepper.
- Grill chicken 5 to 6 minutes per side or until done. Grill pineapple 2 to 3 minutes each side or until browned.
- Serve chicken, pineapple, and bacon on buns with mayonnaise and basil.
