Ingredients
- 1 (12.5-oz) can chopped cooked chicken
- ½ (24-oz) pkg refrigerated sour cream and chive mashed potatoes
- 1 cup panko breadcrumbs, divided
- ½ cup shredded Parmesan cheese
- 2 Tbsp chopped fresh basil
- 3 Tbsp olive oil
Instructions
- Combine chicken, potatoes, ½ cup panko, cheese, and basil in a large bowl; season lightly with salt and pepper. Shape mixture into 9 patties. Dredge patties in ½ cup panko to coat.
- Cook patties in hot oil in a large nonstick skillet over medium-high heat until browned and crisp.
- Divide patties among 2 to 3 plates.

- ½ cup chopped onion
- 1 Tbsp olive oil
- 1 cup frozen baby lima beans
- 1 cup frozen whole kernel corn
- ¼ cup chicken broth
- 1 cup halved grape tomatoes
Side Dish Instructions
- Sauté onion in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until tender.
- Stir in lima beans, corn, broth, and salt and pepper to taste; reduce heat to medium. Cook, covered, 15 minutes or until limas are tender. Stir in tomatoes.
