Parmesan Ham and Potato Casserole
Roasted Carrots and Red OnionIngredients
- 3 oz thinly sliced low-sodium deli ham, chopped
- ¾ lb red potatoes, sliced
- ½ cup sliced red onion
- ½ tsp dried oregano
- ⅛ tsp pepper
- 2 tsp extra virgin olive oil
- 2 Tbsp freshly grated Parmesan cheese
Instructions
- Preheat oven to 350°F. Cook ham in a small ovenproof skillet coated with cooking spray over medium-high heat 3 minutes or until edges begin to brown.
- Remove ham from skillet. Layer half each of potatoes and onions in bottom of skillet; top with ham, oregano, and pepper.
- Top with remaining potatoes and onions; cover skillet with foil. Bake 35 minutes or until potatoes are tender when pierced with a fork.
- Remove from oven; drizzle with oil and sprinkle with cheese. Let stand 5 minutes before serving.

- ½ lb carrots, peeled and cut into ½-inch pieces
- ½ cup chopped red onion
- 1 Tbsp olive oil
- ¼ tsp garlic powder
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat oven to 350°F. Toss together all ingredients over a foil-lined rimmed baking sheet; spread in a single layer. Bake 35 minutes or until tender and golden brown, stirring occasionally.
