Parmesan Ham and Potato Casserole

Ingredients

  • 3 oz thinly sliced low-sodium deli ham, chopped
  • ¾ lb red potatoes, sliced
  • ½ cup sliced red onion
  • ½ tsp dried oregano
  • ⅛ tsp pepper
  • 2 tsp extra virgin olive oil
  • 2 Tbsp freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 350°F. Cook ham in a small ovenproof skillet coated with cooking spray over medium-high heat 3 minutes or until edges begin to brown.
  2. Remove ham from skillet. Layer half each of potatoes and onions in bottom of skillet; top with ham, oregano, and pepper.
  3. Top with remaining potatoes and onions; cover skillet with foil. Bake 35 minutes or until potatoes are tender when pierced with a fork.
  4. Remove from oven; drizzle with oil and sprinkle with cheese. Let stand 5 minutes before serving.

  • ½ lb carrots, peeled and cut into ½-inch pieces
  • ½ cup chopped red onion
  • 1 Tbsp olive oil
  • ¼ tsp garlic powder
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 350°F. Toss together all ingredients over a foil-lined rimmed baking sheet; spread in a single layer. Bake 35 minutes or until tender and golden brown, stirring occasionally.
