Pork and Pineapple Salad Bowls

Ingredients

  • 1 pork tenderloin (1 lb), cubed
  • 1 Tbsp Creole seasoning
  • 1 Tbsp olive oil
  • ½ head romaine lettuce, chopped
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (8-oz) can pineapple chunks, drained (or use pineapple rings, halved)
  • 1 avocado, sliced
  • ½ (3.5-oz) pkg tortilla strips
  • ½ (16-oz) bottle honey-mustard dressing

Instructions

  1. Sprinkle pork with seasoning. Cook pork in hot oil in a large nonstick skillet over medium-high heat until done.
  2. Divide lettuce between 2 shallow bowls. Top with pork, beans, pineapple, avocado, and tortilla strips. Drizzle with honey mustard.
