Simple Greek Grilled Chicken
Roasted Potatoes and Steamed Green Beans
Ingredients
- ¾ lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
- ½ Tbsp Greek seasoning
Instructions
- Preheat grill or grill pan to medium-high heat. Cut chicken in half crosswise; pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Rub chicken with oil, and sprinkle with Greek seasoning.
- Grill chicken, covered, 6 minutes per side or until done.
Side Dish Ingredients
- 1 lb small red potatoes, cut into wedges
- 2 Tbsp olive oil
- ½ tsp dried oregano
- ½ tsp garlic salt
- ½ (15-oz) pkg frozen green beans
Side Dish Instructions
- Preheat oven to 425°F. Toss together potatoes, oil, oregano, and garlic salt on a lightly greased rimmed baking sheet.
- Bake 25 to 30 minutes or until potatoes are tender and golden brown.
- Steam green beans according to package directions.
