Simple Greek Grilled Chicken

Roasted Potatoes and Steamed Green Beans

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • ½ Tbsp Greek seasoning

Instructions

  1. Preheat grill or grill pan to medium-high heat. Cut chicken in half crosswise; pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Rub chicken with oil, and sprinkle with Greek seasoning.
  3. Grill chicken, covered, 6 minutes per side or until done.

Side Dish Ingredients

  • 1 lb small red potatoes, cut into wedges
  • 2 Tbsp olive oil
  • ½ tsp dried oregano
  • ½ tsp garlic salt
  • ½ (15-oz) pkg frozen green beans

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together potatoes, oil, oregano, and garlic salt on a lightly greased rimmed baking sheet.
  2. Bake 25 to 30 minutes or until potatoes are tender and golden brown.
  3. Steam green beans according to package directions.
