Sweet-Hot Chicken

Ingredients
- 2 lb boneless, skinless chicken breasts, cut in half lengthwise
- 1½ tsp ground cumin
- 2 Tbsp olive oil
- 2 Tbsp Sriracha hot sauce
- 1 Tbsp low-sodium soy sauce
- 1 Tbsp sugar
Instructions
- Pound chicken to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle with cumin.
- Cook chicken in hot oil, in batches if needed, in a large nonstick skillet over medium-high heat 6 minutes per side or until done.
- Meanwhile, combine hot sauce, soy sauce, and sugar in a small bowl. Spoon sauce over chicken.
Side Dish Ingredients
- ½ cup slivered almonds
- 2 (12-oz) pkg green beans
- ½ cup water
- 1½ Tbsp olive oil
- ½ cup crumbled blue cheese
- ¼ tsp salt
- ¼ tsp pepper
- 1 lemon, cut into 6 wedges
- 4 cups sliced peaches (see Note)
Side Dish Instructions
- Cook nuts in a large nonstick skillet over medium-high heat 2 minutes or until lightly browned, stirring often; remove from skillet.
- Bring beans and water to a boil in the same skillet. Reduce heat; cover and cook 3 minutes or until beans are crisp-tender.
- Uncover; cook 3 minutes longer or until liquid evaporates.
- Add oil; cook 1 minute. Toss with cheese, nuts, salt, and pepper.
- Squeeze lemon wedges over peaches.
