Curried Beef Daube

Mashed Cauliflower and Buttered Broccoli

Ingredients

  • 2 lb boneless chuck roast, trimmed and cut into 2-inch cubes
  • 1 cup chopped onion
  • 1 cup low-sodium beef broth
  • ¼ cup red wine (or use beef broth)
  • 2 Tbsp curry powder
  • ¾ tsp salt
  • ½ tsp pepper
  • 2 cloves garlic, minced
  • ½ lb carrots, chopped

Instructions

  1. Combine beef, onion, broth, wine, curry powder, salt, pepper, and garlic in a 5- to 7-quart slow cooker.
  2. Cover and cook on LOW 6 to 7 hours; add carrots.
  3. Cook 1 hour or until beef and carrots are tender.

Side Dish Ingredients

  • 2 (12-oz) pkg frozen mashed cauliflower
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 2 (12-oz) pkg broccoli florets
  • 2 Tbsp melted butter

Side Dish Instructions

  1. Cook cauliflower according to package directions. Season with ½ tsp each salt and pepper.
  2. Steam broccoli in a steamer basket over simmering water 10 minutes or until crisp-tender. Drizzle with butter; season with ¼ tsp each salt and pepper.
