Curried Beef Daube
Mashed Cauliflower and Buttered Broccoli
Ingredients
- 2 lb boneless chuck roast, trimmed and cut into 2-inch cubes
- 1 cup chopped onion
- 1 cup low-sodium beef broth
- ¼ cup red wine (or use beef broth)
- 2 Tbsp curry powder
- ¾ tsp salt
- ½ tsp pepper
- 2 cloves garlic, minced
- ½ lb carrots, chopped
Instructions
- Combine beef, onion, broth, wine, curry powder, salt, pepper, and garlic in a 5- to 7-quart slow cooker.
- Cover and cook on LOW 6 to 7 hours; add carrots.
- Cook 1 hour or until beef and carrots are tender.
Side Dish Ingredients
- 2 (12-oz) pkg frozen mashed cauliflower
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 2 (12-oz) pkg broccoli florets
- 2 Tbsp melted butter
Side Dish Instructions
- Cook cauliflower according to package directions. Season with ½ tsp each salt and pepper.
- Steam broccoli in a steamer basket over simmering water 10 minutes or until crisp-tender. Drizzle with butter; season with ¼ tsp each salt and pepper.
