Grilled Buffalo Chicken Cobb Salad

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • ½ cup Buffalo sauce
  • 2 (9-oz) pkg chopped romaine lettuce
  • 1 (6-count) pkg hard-cooked eggs, cut into wedges
  • ½ cup crumbled blue cheese
  • 1 cup halved grape tomatoes
  • 1 cup shredded carrots
  • ¾ cup refrigerated yogurt Ranch dressing 

Instructions

  1. Preheat grill to medium-high heat. Rub chicken with oil. Grill chicken, covered, 4 to 5 minutes per side or until done. Cut crosswise into strips, and toss with Buffalo sauce.
  2. Place lettuce on 6 plates; top with chicken, eggs, cheese, tomatoes, and carrots over lettuce. Drizzle with dressing.
