Grilled Buffalo Chicken Cobb Salad
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 2 Tbsp olive oil
- ½ cup Buffalo sauce
- 2 (9-oz) pkg chopped romaine lettuce
- 1 (6-count) pkg hard-cooked eggs, cut into wedges
- ½ cup crumbled blue cheese
- 1 cup halved grape tomatoes
- 1 cup shredded carrots
- ¾ cup refrigerated yogurt Ranch dressing
Instructions
- Preheat grill to medium-high heat. Rub chicken with oil. Grill chicken, covered, 4 to 5 minutes per side or until done. Cut crosswise into strips, and toss with Buffalo sauce.
- Place lettuce on 6 plates; top with chicken, eggs, cheese, tomatoes, and carrots over lettuce. Drizzle with dressing.
