Spicy Dijon Pork Roast
Tarragon Rice and Steamed Green Beans
Ingredients
- 2 lb bone-in pork shoulder roast, well trimmed
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp Dijon mustard
- 1½ Tbsp hot sauce
- 1 Tbsp olive oil
- 1 tsp Italian seasoning
- 3 cloves garlic, minced
- ½ onion, chopped
Instructions
- Sprinkle pork with salt and pepper. Place in a 3- to 4-quart slow cooker.
- Combine mustard, hot sauce, oil, Italian seasoning, and garlic in a bowl. Rub mustard mixture over pork. Arrange onion around pork.
- Cover and cook on LOW 8 to 10 hours or until pork is tender. (Very thinly slice 1½ cups pork, and reserve with 3 Tbsp cooking liquid for Shaved Pork Sandwiches recipe.) Serve remaining pork with rice and green beans.
Side Dish Ingredients
- ¾ cup long-grain brown rice, rinsed
- 1½ Tbsp chopped fresh tarragon
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 (8-oz) pkg thin green beans
Side Dish Instructions
- Cook rice according to package directions. Stir in tarragon, salt, and pepper.
- Steam green beans according to package directions.
