Orange-Rosemary Chicken

Ingredients

  • 6 bone-in, skin-on chicken breasts
  • 2 navel oranges
  • 3 Tbsp finely chopped fresh rosemary (or use 1 Tbsp dried crushed rosemary)
  • 1 tsp kosher salt
  • 4 cloves garlic, minced

Instructions

  1. Preheat oven to 425°F. Place chicken on a rimmed baking sheet.
  2. Grate 2 Tbsp zest and squeeze ⅓ cup juice from oranges. Combine orange zest, orange juice, rosemary, salt, and garlic; rub on chicken.
  3. Bake 45 minutes or until done.

  • ⅓ cup olive-oil mayonnaise
  • 1 Tbsp honey
  • 1 Tbsp apple cider vinegar
  • ¼ tsp kosher salt
  • 1 (12-oz) pkg broccoli slaw
  • 1 (5-oz) pkg baby kale
  • 1 cup halved seedless red grapes

Side Dish Instructions

  1. Whisk together mayonnaise, honey, vinegar, and salt in a large bowl. Add slaw, kale, and grapes; toss.
