Creole Shrimp
Sweet Potato and Zucchini "Noodles"Ingredients
- 2 lemons
- 2 lb peeled and deveined, large raw shrimp
- 1 Tbsp Creole seasoning
- 3 Tbsp olive oil
- ¼ cup butter
Instructions
- Grate zest and squeeze juice from lemons into a bowl.
- Sprinkle shrimp with Creole seasoning. Cook shrimp in hot oil in a large nonstick skillet over medium-high heat 2 minutes per side or just until shrimp turn pink. Remove from skillet, and keep warm.
- Melt butter in skillet over medium heat; add lemon zest and juice; cook 1 minute. Return shrimp to skillet; cook 2 minutes.

- 1 (16-oz) pkg sweet potato noodles
- 1 (16-oz) pkg zucchini noodles
- 2 Tbsp olive oil
- ¼ cup chopped fresh parsley
- ¼ tsp salt
Side Dish Instructions
- Cook noodles in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes or until tender. Sprinkle with parsley and salt.
