Chorizo-Chicken Skillet

Ingredients

  • ½ (10-oz) pkg chorizo sausage
  • ½ lb boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 (8.8-oz) pkg microwavable brown rice
  • 2 Tbsp low-sodium chicken broth
  • ½ (12-oz) pkg frozen green peas
  • ¼ cup freshly grated Parmesan cheese
  • Chopped fresh parsley (optional)

Instructions

  1. Cook chorizo in a deep skillet over medium-high heat 5 to 6 minutes or until crisp. Remove chorizo from skillet, reserving drippings in skillet.
  2. Cook chicken in hot drippings in skillet 7 to 9 minutes or until browned .
  3. Stir in rice and broth. Bring to a simmer; cook 5 to 6 minutes. Stir in peas, cheese, and chorizo; cook 3 minutes or until thoroughly heated. Serve sprinkled with parsley, if desired.
