Chorizo-Chicken Skillet
Ingredients
- ½ (10-oz) pkg chorizo sausage
- ½ lb boneless, skinless chicken breasts, cut into bite-size pieces
- 1 (8.8-oz) pkg microwavable brown rice
- 2 Tbsp low-sodium chicken broth
- ½ (12-oz) pkg frozen green peas
- ¼ cup freshly grated Parmesan cheese
- Chopped fresh parsley (optional)
Instructions
- Cook chorizo in a deep skillet over medium-high heat 5 to 6 minutes or until crisp. Remove chorizo from skillet, reserving drippings in skillet.
- Cook chicken in hot drippings in skillet 7 to 9 minutes or until browned .
- Stir in rice and broth. Bring to a simmer; cook 5 to 6 minutes. Stir in peas, cheese, and chorizo; cook 3 minutes or until thoroughly heated. Serve sprinkled with parsley, if desired.
