Tuscan Garlic Butter Chicken

Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 2 Tbsp butter
  • 6 cloves garlic, minced
  • 1 cup chopped onion
  • ⅓ cup white wine
  • 1½ cups heavy cream
  • ½ cup thinly sliced sun-dried tomatoes
  • 3 cups baby spinach
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Cook chicken, in batches, in 1 Tbsp hot oil per batch in a large skillet over medium-high heat 5 to 7 minutes per side or until done. Remove chicken from skillet, and set aside.
  2. Melt butter in skillet; add garlic, onion, and wine. Simmer over medium-high heat until fragrant. Reduce heat to low, and add cream. Return to a simmer, stirring occasionally. Add tomatoes, spinach, and cheese.
  3. Add cooked chicken back to skillet, and spoon sauce over each chicken breast. Serve over Buttery Linguine recipe.

Side Dish Ingredients

  • 8 oz linguine
  • 2 Tbsp butter
  • ¼ cup chopped fresh parsley
  • 1 tsp Italian seasoning
  • ½ tsp salt

Side Dish Instructions

  1. Cook linguine according to package directions. Toss with butter, parsley, Italian seasoning, and salt until butter melts. Serve hot.
