Italian Gnocchi
Ingredients
- 1 (12-oz) pkg Italian sausage
- 1 onion, chopped
- 1 Tbsp olive oil
- 5 cloves garlic, minced
- ⅓ cup white wine
- 1 (14.5-oz) can diced tomatoes
- 1 cup heavy cream
- 1 (16-oz) pkg whole wheat potato gnocchi
- ¾ cup freshly grated Parmesan cheese
- ¼ cup crumbled feta cheese
- ½ cup fresh basil leaves, chopped
Instructions
- Cook sausage and onion in hot oil in a large Dutch oven over medium-high heat 3 to 4 minutes or until onion is tender; add garlic, and sauté 1 to 2 minutes or until fragrant.
- Add wine, and sauté 2 to 3 minutes. Add tomatoes, cream, and gnocchi. Bring to a boil, cover, and reduce heat to low; cook 5 to 6 minutes or until gnocchi is tender. Stir in both cheeses and basil.
