Italian Gnocchi

Ingredients

  • 1 (12-oz) pkg Italian sausage
  • 1 onion, chopped
  • 1 Tbsp olive oil
  • 5 cloves garlic, minced
  • ⅓ cup white wine
  • 1 (14.5-oz) can diced tomatoes
  • 1 cup heavy cream
  • 1 (16-oz) pkg whole wheat potato gnocchi
  • ¾ cup freshly grated Parmesan cheese
  • ¼ cup crumbled feta cheese
  • ½ cup fresh basil leaves, chopped

Instructions

  1. Cook sausage and onion in hot oil in a large Dutch oven over medium-high heat 3 to 4 minutes or until onion is tender; add garlic, and sauté 1 to 2 minutes or until fragrant.
  2. Add wine, and sauté 2 to 3 minutes. Add tomatoes, cream, and gnocchi. Bring to a boil, cover, and reduce heat to low; cook 5 to 6 minutes or until gnocchi is tender. Stir in both cheeses and basil.
