Pork Chops with Brussels Sprouts and Apples

Ingredients

  • 6 (6-oz) bone-in pork chops
  • 1 tsp salt, divided
  • 1 tsp pepper, divided
  • 2 Tbsp olive oil
  • 6 slices uncured bacon, chopped
  • ½ cup low-sodium chicken broth
  • 2 Tbsp apple cider vinegar
  • 2 (16-oz) pkg shredded Brussels sprouts (see Note)
  • 2 organic apples, sliced

Instructions

  1. Sprinkle pork with ½ tsp each salt and pepper. Cook, in batches, in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until done. Remove from skillet; cover and keep warm.
  2. Add bacon to skillet; cook over medium-high heat 5 minutes or until crisp. Drain, reserving 2 Tbsp drippings in skillet.
  3. Add broth and vinegar to hot drippings; bring to a simmer. Add Brussels sprouts, apples, and ½ tsp each salt and pepper. Cook 6 to 8 minutes or until Brussels sprouts and apples are tender.
  4. Serve pork with Brussels sprouts and apples; sprinkle with bacon.

Side Dish Ingredients

  • 3½ lb organic sweet potatoes
  • ⅓ cup pure maple syrup
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp milk

Side Dish Instructions

  1. Preheat oven to 400°F. Prick and bake potatoes 45 minutes to 1 hour or until very tender; cool slightly, peel and place in a saucepan.
  2. Add syrup, salt, pepper, and milk; mash to desired consistency. Cook over medium-high heat 5 minutes or until thoroughly heated.
