Pork Chops with Brussels Sprouts and Apples
Maple Mashed Sweet Potatoes
Ingredients
- 6 (6-oz) bone-in pork chops
- 1 tsp salt, divided
- 1 tsp pepper, divided
- 2 Tbsp olive oil
- 6 slices uncured bacon, chopped
- ½ cup low-sodium chicken broth
- 2 Tbsp apple cider vinegar
- 2 (16-oz) pkg shredded Brussels sprouts (see Note)
- 2 organic apples, sliced
Instructions
- Sprinkle pork with ½ tsp each salt and pepper. Cook, in batches, in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until done. Remove from skillet; cover and keep warm.
- Add bacon to skillet; cook over medium-high heat 5 minutes or until crisp. Drain, reserving 2 Tbsp drippings in skillet.
- Add broth and vinegar to hot drippings; bring to a simmer. Add Brussels sprouts, apples, and ½ tsp each salt and pepper. Cook 6 to 8 minutes or until Brussels sprouts and apples are tender.
- Serve pork with Brussels sprouts and apples; sprinkle with bacon.
Side Dish Ingredients
- 3½ lb organic sweet potatoes
- ⅓ cup pure maple syrup
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp milk
Side Dish Instructions
- Preheat oven to 400°F. Prick and bake potatoes 45 minutes to 1 hour or until very tender; cool slightly, peel and place in a saucepan.
- Add syrup, salt, pepper, and milk; mash to desired consistency. Cook over medium-high heat 5 minutes or until thoroughly heated.
