Moroccan Salmon
Minted Couscous Pilaf
Ingredients
- 1 (6-oz) carton plain yogurt
- 1 tsp lemon zest
- 2 Tbsp fresh lemon juice
- 2 cloves garlic, minced
- 2 tsp ground coriander
- 2 tsp ground cumin
- 1 tsp paprika
- 2¼ lb skinless salmon fillets
- 1 tsp salt
- ½ tsp pepper
Instructions
- Stir together yogurt, lemon zest, lemon juice, garlic, coriander, cumin, and paprika in a large zip-top plastic freezer bag; add fish, and turn to coat. Seal and chill 30 minutes to 2 hours.
- Preheat broiler. Transfer fish to a lightly greased broiler rack; sprinkle with salt and pepper. Broil 6 inches from heat 8 to 10 minutes or until fish flakes with a fork.
Side Dish Ingredients
- 2 (10-oz) pkg whole wheat couscous
- 1 (8-oz) pkg frozen green peas
- ½ cup chopped red onion
- 1 Tbsp olive oil
- 2 tsp white wine vinegar
- ½ tsp salt
- ¼ tsp pepper
- ¼ cup chopped fresh mint
Side Dish Instructions
- Prepare couscous according to package directions, adding peas and onion during 5-minute stand time.
- Gently stir in oil and remaining ingredients; fluff with a fork.
