Moroccan Salmon

Ingredients

  • 1 (6-oz) carton plain yogurt
  • 1 tsp lemon zest
  • 2 Tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 2¼ lb skinless salmon fillets
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Stir together yogurt, lemon zest, lemon juice, garlic, coriander, cumin, and paprika in a large zip-top plastic freezer bag; add fish, and turn to coat. Seal and chill 30 minutes to 2 hours.
  2. Preheat broiler. Transfer fish to a lightly greased broiler rack; sprinkle with salt and pepper. Broil 6 inches from heat 8 to 10 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 2 (10-oz) pkg whole wheat couscous
  • 1 (8-oz) pkg frozen green peas
  • ½ cup chopped red onion
  • 1 Tbsp olive oil
  • 2 tsp white wine vinegar
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ cup chopped fresh mint

Side Dish Instructions

  1. Prepare couscous according to package directions, adding peas and onion during 5-minute stand time.
  2. Gently stir in oil and remaining ingredients; fluff with a fork.
