Mustard-Crusted Turkey Breast
Sweet Potato Casserole and Steamed Green BeansIngredients
- 1 (5- to 6-lb) bone-in turkey breast
- ⅓ cup whole-grain mustard
- 1 Tbsp dried thyme
- 1 tsp salt
- 1 tsp pepper
- 1 (14.5-oz) can low-sodium chicken broth
Instructions
- Preheat oven to 325°F. Place turkey on a rack in a roasting pan; loosen skin from turkey.
- Combine mustard, thyme, salt, and pepper; rub underneath and over skin. Pour broth into pan.
- Bake 1 hour and 30 minutes or until a meat thermometer inserted into thickest portion reads 165°F; shield with foil, if necessary.
Side Dish Ingredients
- 2 lb organic sweet potatoes
- ¼ cup pure maple syrup
- 2 Tbsp butter
- 1 tsp ground cinnamon
- 1 cup chopped pecans
- 1½ lb green beans, trimmed
- 1 tsp salt
- 1 tsp pepper
Side Dish Instructions
- Preheat oven to 325°F. Bake potatoes 45 minutes or until tender; peel and mash.
- Stir in syrup, butter, and cinnamon; spoon into a 2-quart baking dish. Top with nuts. Bake 10 minutes or until toasted.
- Meanwhile, steam green beans in a steamer basket over simmering water 6 minutes or until crisp-tender. Sprinkle with salt and pepper.
