Mustard-Crusted Turkey Breast

Ingredients

  • 1 (5- to 6-lb) bone-in turkey breast
  • ⅓ cup whole-grain mustard
  • 1 Tbsp dried thyme
  • 1 tsp salt
  • 1 tsp pepper
  • 1 (14.5-oz) can low-sodium chicken broth

Instructions

  1. Preheat oven to 325°F. Place turkey on a rack in a roasting pan; loosen skin from turkey.
  2. Combine mustard, thyme, salt, and pepper; rub underneath and over skin. Pour broth into pan.
  3. Bake 1 hour and 30 minutes or until a meat thermometer inserted into thickest portion reads 165°F; shield with foil, if necessary.

Side Dish Ingredients

  • 2 lb organic sweet potatoes
  • ¼ cup pure maple syrup
  • 2 Tbsp butter
  • 1 tsp ground cinnamon
  • 1 cup chopped pecans
  • 1½ lb green beans, trimmed
  • 1 tsp salt
  • 1 tsp pepper

Side Dish Instructions

  1. Preheat oven to 325°F. Bake potatoes 45 minutes or until tender; peel and mash.
  2. Stir in syrup, butter, and cinnamon; spoon into a 2-quart baking dish. Top with nuts. Bake 10 minutes or until toasted.
  3. Meanwhile, steam green beans in a steamer basket over simmering water 6 minutes or until crisp-tender. Sprinkle with salt and pepper.
