Sausage, Sweet Potato, and Brussels Sprouts Hash

Ingredients

  • 1 (13-oz) pkg natural smoked Polish sausage links, sliced
  • 3 organic sweet potatoes, peeled and cubed
  • 1 onion, chopped
  • 1 lb Brussels sprouts, trimmed and halved
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup water
  • 6 large eggs
  • ¼ cup chopped fresh parsley

Instructions

  1. Cook sausage, potatoes, onion, and Brussels sprouts in hot oil in a large cast-iron skillet over medium heat 5 minutes or until sausage is browned.
  2. Add garlic, salt, and pepper. Sauté 2 minutes. Add water; cover and cook 10 minutes or until vegetables are tender.
  3. Make 6 wells in mixture; carefully break 1 egg into each well. Cover and cook 3 minutes or until egg yolks are cooked to desired doneness; sprinkle with parsley.

Side Dish Ingredients

  • 6 organic pears, halved and cored
  • 1 (4-oz) log goat cheese, crumbled
  • ¼ cup chopped walnuts
  • 3 Tbsp honey

Side Dish Instructions

  1. Place 2 pear halves on each of 6 plates; place cheese in center of pears. Sprinkle with nuts; drizzle with honey.
