Sausage, Sweet Potato, and Brussels Sprouts Hash
Goat Cheese-Filled Pears
Ingredients
- 1 (13-oz) pkg natural smoked Polish sausage links, sliced
- 3 organic sweet potatoes, peeled and cubed
- 1 onion, chopped
- 1 lb Brussels sprouts, trimmed and halved
- 1 Tbsp olive oil
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
- ¼ cup water
- 6 large eggs
- ¼ cup chopped fresh parsley
Instructions
- Cook sausage, potatoes, onion, and Brussels sprouts in hot oil in a large cast-iron skillet over medium heat 5 minutes or until sausage is browned.
- Add garlic, salt, and pepper. Sauté 2 minutes. Add water; cover and cook 10 minutes or until vegetables are tender.
- Make 6 wells in mixture; carefully break 1 egg into each well. Cover and cook 3 minutes or until egg yolks are cooked to desired doneness; sprinkle with parsley.
Side Dish Ingredients
- 6 organic pears, halved and cored
- 1 (4-oz) log goat cheese, crumbled
- ¼ cup chopped walnuts
- 3 Tbsp honey
Side Dish Instructions
- Place 2 pear halves on each of 6 plates; place cheese in center of pears. Sprinkle with nuts; drizzle with honey.
