Salisbury Steak
Brown Rice and Steamed CarrotsIngredients
- 1½ lb lean ground beef
- ½ cup whole wheat panko breadcrumbs
- 1 tsp Italian seasoning
- 2 Tbsp Worcestershire sauce
- 1 tsp salt, divided
- 1 tsp pepper, divided
- 3 Tbsp olive oil, divided
- 1 onion, sliced
- 1 (8-oz) pkg sliced mushrooms
- 1 (14.5-oz) can low-sodium beef broth
- 1 Tbsp cornstarch
Instructions
- Combine beef, panko, Italian seasoning, Worcestershire sauce, and ½ tsp each salt and pepper; shape into 6 patties.
- Cook patties in 1 Tbsp hot oil in a large nonstick skillet 2 to 3 minutes per side or until browned. Remove and keep warm.
- Sauté onion and mushrooms in 2 Tbsp hot oil in skillet 8 minutes or until browned and tender.
- Whisk together broth and cornstarch; add to skillet. Return patties to skillet; bring to a boil, and cook 5 minutes or until gravy is thickened and patties are done.
Side Dish Ingredients
- 1½ cups long-grain brown rice
- 2 lb carrots, sliced
- 2 Tbsp butter
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook rice according to package directions.
- Steam carrots in a steamer basket over simmering water 7 minutes or until tender. Transfer to a bowl; stir in butter, salt, and pepper.
