Salisbury Steak

Brown Rice and Steamed Carrots

Ingredients

  • 1½ lb lean ground beef
  • ½ cup whole wheat panko breadcrumbs
  • 1 tsp Italian seasoning
  • 2 Tbsp Worcestershire sauce
  • 1 tsp salt, divided
  • 1 tsp pepper, divided
  • 3 Tbsp olive oil, divided
  • 1 onion, sliced
  • 1 (8-oz) pkg sliced mushrooms
  • 1 (14.5-oz) can low-sodium beef broth
  • 1 Tbsp cornstarch

Instructions

  1. Combine beef, panko, Italian seasoning, Worcestershire sauce, and ½ tsp each salt and pepper; shape into 6 patties.
  2. Cook patties in 1 Tbsp hot oil in a large nonstick skillet 2 to 3 minutes per side or until browned. Remove and keep warm.
  3. Sauté onion and mushrooms in 2 Tbsp hot oil in skillet 8 minutes or until browned and tender.
  4. Whisk together broth and cornstarch; add to skillet. Return patties to skillet; bring to a boil, and cook 5 minutes or until gravy is thickened and patties are done.

Side Dish Ingredients

  • 1½ cups long-grain brown rice
  • 2 lb carrots, sliced
  • 2 Tbsp butter
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Steam carrots in a steamer basket over simmering water 7 minutes or until tender. Transfer to a bowl; stir in butter, salt, and pepper.
