Pork Chops with Balsamic-Bacon Sauce

Ingredients
- 4 slices center cut bacon, chopped
- 6 (6-oz) bone-in pork chops, trimmed
- ½ tsp salt
- ½ tsp pepper
- 1 cup sliced red onion
- 1 clove garlic, minced
- 1 Tbsp whole wheat flour
- ⅔ cup low-sodium chicken broth
- 3 Tbsp balsamic vinegar
- 2 Tbsp whole-grain mustard
Instructions
- Cook bacon in a large nonstick skillet over medium heat until crisp; drain, reserving drippings in skillet.
- Sprinkle pork with salt and pepper; cook in hot drippings in skillet 3 to 4 minutes per side or until done. Remove from skillet; keep warm.
- Add onion and garlic to drippings in skillet; cook, stirring often, 4 minutes. Add flour; cook, stirring constantly, 2 minutes.
- Stir in broth, vinegar, mustard, and bacon; cook 2 to 3 minutes or until sauce is thickened. Spoon sauce over pork.

- 2 (12-oz) pkg broccoli-cauliflower medley
- 3 Tbsp olive oil
- ¾ tsp salt
- ¾ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss together broccoli-cauliflower medley, oil, salt, and pepper on a lightly greased large rimmed baking sheet.
- Bake 20 minutes or until browned and tender, stirring occasionally.
