Pork Chops with Balsamic-Bacon Sauce

Ingredients

  • 4 slices center cut bacon, chopped
  • 6 (6-oz) bone-in pork chops, trimmed
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup sliced red onion
  • 1 clove garlic, minced
  • 1 Tbsp whole wheat flour
  • ⅔ cup low-sodium chicken broth
  • 3 Tbsp balsamic vinegar
  • 2 Tbsp whole-grain mustard

Instructions

  1. Cook bacon in a large nonstick skillet over medium heat until crisp; drain, reserving drippings in skillet.
  2. Sprinkle pork with salt and pepper; cook in hot drippings in skillet 3 to 4 minutes per side or until done. Remove from skillet; keep warm.
  3. Add onion and garlic to drippings in skillet; cook, stirring often, 4 minutes. Add flour; cook, stirring constantly, 2 minutes.
  4. Stir in broth, vinegar, mustard, and bacon; cook 2 to 3 minutes or until sauce is thickened. Spoon sauce over pork.

  • 2 (12-oz) pkg broccoli-cauliflower medley
  • 3 Tbsp olive oil
  • ¾ tsp salt
  • ¾ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together broccoli-cauliflower medley, oil, salt, and pepper on a lightly greased large rimmed baking sheet.
  2. Bake 20 minutes or until browned and tender, stirring occasionally.
