Country Corn Frittata
Citrus Mango
Ingredients
- 2 large eggs, beaten
- 2 Tbsp fat-free milk
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 cups frozen corn kernels, thawed
- ½ cup chopped green bell pepper
- 1 jalapeño pepper, seeded and minced
- 2 Tbsp finely chopped red onion
- 1 tsp canola oil
- ¼ cup crumbled reduced-fat feta cheese
- ¼ cup picante sauce
Instructions
- Whisk together eggs, milk, salt and pepper in a bowl; set aside.
- Cook corn, both peppers, and onion in hot oil in a small nonstick skillet over medium heat 3 minutes or until tender.
- Add eggs to skillet; reduce heat to medium-low. Cover and cook, without stirring, 15 to 18 minutes or until just set in center.
- Remove skillet from heat; sprinkle frittata with cheese. Let stand 5 minutes before cutting into wedges. Serve with picante sauce.

- ½ tsp lemon zest
- 1 tsp lemon juice

- Gently toss together all ingredients in a serving bowl.
