Country Corn Frittata

Ingredients

  • 2 large eggs, beaten
  • 2 Tbsp fat-free milk
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 cups frozen corn kernels, thawed
  • ½ cup chopped green bell pepper
  • 1 jalapeño pepper, seeded and minced
  • 2 Tbsp finely chopped red onion
  • 1 tsp canola oil
  • ¼ cup crumbled reduced-fat feta cheese
  • ¼ cup picante sauce

Instructions

  1. Whisk together eggs, milk, salt and pepper in a bowl; set aside.
  2. Cook corn, both peppers, and onion in hot oil in a small nonstick skillet over medium heat 3 minutes or until tender.
  3. Add eggs to skillet; reduce heat to medium-low. Cover and cook, without stirring, 15 to 18 minutes or until just set in center.
  4. Remove skillet from heat; sprinkle frittata with cheese. Let stand 5 minutes before cutting into wedges. Serve with picante sauce.

  • ½ tsp lemon zest
  • 1 tsp lemon juice
