Potsticker Noodle Bowl

Ingredients
- 1 (14-oz) pkg rice linguine noodles (or use regular rice noodles or linguine)
- 1½ lb ground pork (or use ground beef)
- 1 (16-oz) pkg shredded coleslaw
- 2 large eggs, lightly beaten
- ⅓ cup low-sodium chicken broth
- ⅓ cup low-sodium soy sauce
- 2 Tbsp garlic paste
- 1 Tbsp rice vinegar
- 3 green onions, thinly sliced (optional)
Instructions
- Cook noodles according to package directions.
- Cook pork in a large skillet coated with cooking spray over medium-high heat 6 minutes or until browned. Add coleslaw; cook 5 minutes or until coleslaw is tender.
- Push pork mixture to side of skillet. Pour eggs into center, and cook, stirring occasionally, until eggs are set.
- Add broth, soy sauce, garlic, and vinegar to skillet; cook 2 minutes or until thoroughly heated. Sprinkle with onions, if desired. Serve over noodles.
