Potsticker Noodle Bowl

Ingredients

  • 1 (14-oz) pkg rice linguine noodles (or use regular rice noodles or linguine)
  • 1½ lb ground pork (or use ground beef)
  • 1 (16-oz) pkg shredded coleslaw
  • 2 large eggs, lightly beaten
  • ⅓ cup low-sodium chicken broth
  • ⅓ cup low-sodium soy sauce
  • 2 Tbsp garlic paste
  • 1 Tbsp rice vinegar
  • 3 green onions, thinly sliced (optional)

Instructions

  1. Cook noodles according to package directions.
  2. Cook pork in a large skillet coated with cooking spray over medium-high heat 6 minutes or until browned. Add coleslaw; cook 5 minutes or until coleslaw is tender.
  3. Push pork mixture to side of skillet. Pour eggs into center, and cook, stirring occasionally, until eggs are set.
  4. Add broth, soy sauce, garlic, and vinegar to skillet; cook 2 minutes or until thoroughly heated. Sprinkle with onions, if desired. Serve over noodles.
