Zucchini, Bacon, and Bell Pepper Quiche

Ingredients

  • 8 slices bacon
  • 1 red bell pepper, diced
  • 1 zucchini, grated
  • ½ red onion, diced
  • 8 large eggs
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Tbsp olive oil

Instructions

  1. Preheat oven to 350°F. Cook bacon in a large nonstick skillet over medium heat 5 to 6 minutes or until crisp. Drain, reserving 3 Tbsp drippings in skillet. Crumble bacon.
  2. Add bell pepper, zucchini, and onion to hot drippings. Cook 5 minutes or until tender.
  3. Whisk together eggs, seasoning, salt, and pepper in a large bowl. Add bacon and vegetable mixture; stir well. Pour into a 9-inch pie plate greased with oil.
  4. Bake 35 to 40 minutes or until center is set.
