Zucchini, Bacon, and Bell Pepper Quiche
Ingredients
- 8 slices bacon
- 1 red bell pepper, diced
- 1 zucchini, grated
- ½ red onion, diced
- 8 large eggs
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp pepper
- 1 Tbsp olive oil
Instructions
- Preheat oven to 350°F. Cook bacon in a large nonstick skillet over medium heat 5 to 6 minutes or until crisp. Drain, reserving 3 Tbsp drippings in skillet. Crumble bacon.
- Add bell pepper, zucchini, and onion to hot drippings. Cook 5 minutes or until tender.
- Whisk together eggs, seasoning, salt, and pepper in a large bowl. Add bacon and vegetable mixture; stir well. Pour into a 9-inch pie plate greased with oil.
- Bake 35 to 40 minutes or until center is set.
