Ingredients

  • 1 lb new potatoes, cut into ½-inch pieces
  • ½ onion, chopped
  • 1 red bell pepper, chopped
  • ¼ cup olive oil
  • 2 Tbsp chopped green onion
  • 6 large eggs
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup fresh salsa

Instructions

  1. Sauté potatoes, onion, and bell pepper in hot oil in a nonstick skillet over medium-high heat 10 minutes or until tender and potatoes are browned.
  2. Reduce heat to medium-low, and stir in green onion. Whisk together eggs, salt, and pepper; pour over potato mixture.
  3. Cook 10 minutes or until almost set, lifting edges with a spatula to let uncooked portion flow underneath; cover and cook 5 minutes or until set.
  4. Cut into wedges. Serve with salsa.
