Spanish Omelette
Turkey Sausage LinksIngredients
- 1 lb new potatoes, cut into ½-inch pieces
 - ½ onion, chopped
 - 1 red bell pepper, chopped
 - ¼ cup olive oil
 - 2 Tbsp chopped green onion
 - 6 large eggs
 - ½ tsp salt
 - ½ tsp pepper
 - ½ cup fresh salsa
 
Instructions
- Sauté potatoes, onion, and bell pepper in hot oil in a nonstick skillet over medium-high heat 10 minutes or until tender and potatoes are browned.
 - Reduce heat to medium-low, and stir in green onion. Whisk together eggs, salt, and pepper; pour over potato mixture.
 - Cook 10 minutes or until almost set, lifting edges with a spatula to let uncooked portion flow underneath; cover and cook 5 minutes or until set.
 - Cut into wedges. Serve with salsa.
