Ingredients

  • 1 (8.8-oz) pouch microwavable brown rice
  • ½ cup chopped walnuts
  • 2 cups red grapes (any color)
  • 1½ cups chopped rotisserie chicken
  • ½ cup crumbled reduced-fat feta cheese
  • ½ cup light balsamic vinaigrette
  • ¼ cup chopped green onions
  • 1 (5-oz) pkg mixed baby greens
  • 1 (4.4-oz) pkg blueberries

Instructions

  1. Heat rice according to package directions.
  2. Toast nuts in a dry skillet over medium-high heat 4 to 6 minutes or until brown and fragrant.
  3. Toss together all ingredients in a large bowl.
