Creamy Chicken Dijon
Basmati Rice and Broccoli Florets
Ingredients
- 1 lb boneless, skinless chicken breasts, cut in half lengthwise
- 1½ Tbsp butter
- 1 cup gluten-free chicken broth
- ¼ cup finely chopped onion
- 1½ Tbsp Dijon mustard
- 1 Tbsp gluten-free all-purpose flour
- ¼ tsp dried thyme
Instructions
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Melt butter in a large skillet over medium heat. Add chicken; cook 3 minutes per side or until browned.
- Whisk together broth, onion, mustard, flour, and thyme; pour over chicken.
- Cover, reduce heat, and simmer 10 minutes or until chicken is done and sauce is thickened.

- ¾ cup basmati rice
- 1 (12-oz) pkg broccoli florets
- 1½ Tbsp butter
Side Dish Instructions
- Cook rice according to package directions.
- Meanwhile, cook broccoli according to package directions. Toss broccoli with butter. Season rice and broccoli with salt and pepper to taste.
