Ingredients

  • ½ lb ground Italian turkey sausage
  • ½ Tbsp minced garlic
  • 1⅓ cups 100% vegetable juice
  • 1 (14.5-oz) can low-sodium chicken broth
  • ½ (12-oz) pkg cheese tortellini
  • 1 (5-oz) pkg baby spinach

Instructions

  1. Cook sausage and garlic in a Dutch oven over medium heat 7 to 9 minutes or until sausage is browned and crumbly; drain, and return to pot.
  2. Stir in vegetable juice and broth; bring to a boil, reduce heat, and simmer 5 minutes. Add tortellini; simmer 10 minutes or until tender, stirring occasionally.
  3. Gradually add spinach to pot, and cook 2 minutes or until wilted. Season with salt and pepper to taste.
