Spicy Pork, Pepper and Tomato Stir-Fry

Ingredients

  • 1½ lb boneless center-cut pork loin chops, cut into thin strips
  • 2 Tbsp canola oil, divided
  • 1½ cups sliced red onion
  • 2 red bell peppers, cut into thin strips
  • 1 green bell pepper, cut into thin strips
  • 1 pint grape tomatoes
  • ½ cup plus 1 Tbsp low-sodium teriyaki sauce
  • ¾ tsp ground ginger
  • ¼ tsp crushed red pepper

Instructions

  1. Cook half of pork in 1½ tsp hot oil in a large nonstick skillet over medium-high heat 3 to 5 minutes until browned; remove from pan. Repeat procedure with 1½ tsp oil and remaining pork; set aside.
  2. Heat 1 Tbsp oil in the same skillet; cook onion and bell peppers 3 to 4 minutes or until crisp-tender, stirring frequently. Add tomatoes, teriyaki sauce, ginger, and crushed red pepper to pan.
  3. Return pork to pan; cook 4 minutes or until tomatoes are tender and pork is done.

Side Dish Ingredients

  • 1¼ cups bulgur
  • 1½ Tbsp sesame oil
  • ½ tsp salt
  • 2 green onions, finely chopped

Side Dish Instructions

  1. Cook bulgur according to package directions; toss with remaining ingredients.
