Smothered Hamburger Steaks

Cheddar Mashed Potatoes and Roasted Asparagus

Ingredients

  • 6 ground beef patties
  • 1 Tbsp Montreal steak seasoning
  • 1 (20-oz) pkg frozen peppers and onion blend
  • 1 Tbsp olive oil
  • 1 (14.5-oz) can petite diced tomatoes with garlic and olive oil
  • 1 Tbsp balsamic vinegar
  • 1 tsp dried basil

Instructions

  1. Sprinkle patties with seasoning. Cook patties in a large nonstick skillet over medium heat 3 to 4 minutes per side or until browned. Remove patties from skillet; wipe skillet clean.
  2. Cook peppers and onion blend in hot oil in skillet over medium heat 5 minutes or until tender. Stir in tomatoes, vinegar, and basil. Return patties to skillet, and cook 5 minutes or until thoroughly heated.

Side Dish Ingredients

  • 2 (24-oz) carton refrigerated mashed potatoes
  • 1 cup shredded Cheddar cheese
  • 1 lb asparagus, trimmed
  • 1 Tbsp olive oil

Side Dish Instructions

  1. Heat potatoes according to package directions; stir in cheese.
  2. Preheat oven to 400°F. Toss together asparagus and oil on a rimmed baking sheet; spread in a single layer.
  3. Bake 10 to 12 minutes or until tender and lightly browned; season to taste.
