Easy Burrito Casserole
Little Oranges and Guacamole with Chips
Ingredients
- ¾ lb ground beef (or use ground turkey)
- ½ (15-oz) can refried beans
- 1 (10.5-oz) can cream of chicken soup
- ½ cup sour cream
- ½ (1-oz) envelope taco seasoning
- 4 burrito-size flour tortillas
- 1½ cups shredded Mexican-blend cheese
Instructions
- Preheat oven to 350°F. Cook beef in a large skillet over medium-high heat until browned and crumbly; drain and return to skillet.
- Stir in beans, soup, sour cream, and seasoning.
- Tear tortillas into 2-inch pieces. Arrange half of tortillas in bottom of a lightly greased small baking dish. Top with half of meat mixture and ¾ cup cheese. Repeat layers.
- Bake 20 to 30 minutes or until hot and bubbly.
Side Dish Ingredients
- 2 (4-oz) cups mandarin oranges, chilled
- ½ (8-oz) container guacamole
- ⅓ (9-oz) pkg tortilla chips
Side Dish Instructions
- Serve oranges and guacamole with chips on each plate.
