Easy Burrito Casserole

Little Oranges and Guacamole with Chips

Ingredients

  • ¾ lb ground beef (or use ground turkey)
  • ½ (15-oz) can refried beans
  • 1 (10.5-oz) can cream of chicken soup
  • ½ cup sour cream
  • ½ (1-oz) envelope taco seasoning
  • 4 burrito-size flour tortillas
  • 1½ cups shredded Mexican-blend cheese

Instructions

  1. Preheat oven to 350°F. Cook beef in a large skillet over medium-high heat until browned and crumbly; drain and return to skillet.
  2. Stir in beans, soup, sour cream, and seasoning.
  3. Tear tortillas into 2-inch pieces. Arrange half of tortillas in bottom of a lightly greased small baking dish. Top with half of meat mixture and ¾ cup cheese. Repeat layers.
  4. Bake 20 to 30 minutes or until hot and bubbly.

Side Dish Ingredients

  • 2 (4-oz) cups mandarin oranges, chilled
  • ½ (8-oz) container guacamole
  • ⅓ (9-oz) pkg tortilla chips

Side Dish Instructions

  1. Serve oranges and guacamole with chips on each plate.
